Oop Mint

Still cooking on a luxury estate in majorca

Still working up at the villa in the middle of nowhere, the weather was beautiful and the guests decided to  cancel their restaurant booking and invite a few friends for a last minute barbecue..  Oops! Not a problem! . I had to imrpovise, but with a difference………hence, this weeks recipe – Lamb and Couscous Burgers.

LAMB AND COUSCOUS BURGERS

COUSCOUS

100 grams couscous

100 ml vegetable stock or chicken stock or paella seasoning*

selection of aubergine, red pepper, zuchini, leek, finely diced & roasted

sunflower seeds

Pour the hot stock over the couscous, add a little olive oil and leave to cool.

In the meantime roast the finely diced vegetables in the oven or saute, and add sunflower seeds.

LAMB BURGERS

Ginger Make into a paste in a mini blender

Garlic

Coriander

Sun Dried Tomatoes

Ground Coriander, Cumin Seeds

l Kilo Minced Lamb

l or 2 Eggs

as needed Breadcrumbs

make the lamb mixture– add the couscous and eggs and breadcrumbs as necessary to bind – and shape and grill on the barbecue

These are great as little mini burgers as a canape with a little piece of fetta or goats cheese skewered on top with a yogourt and garlic mint dip. Yum!
